Elia Romanini is a PhD candidate at Università Cattolica del Sacro Cuore in Piacenza, Italy. He received a Bachelor’s degree in viticulture and oenology in 2013 and a Master’s degree in food technology in 2015. He worked for two years as a brewer in an Italian craft brewery. His PhD project is on the measurement, analysis and innovative management of sustainable technologies used in the production of fermented beverages. As a visiting student he is collaborating with the Australian Wine Research Institute on a project investigating the use of grape seed powder as a bentonite alternative for white wine fining. The goal of the project is to find environmentally friendly solutions with a special eye on any drawbacks and environmental impacts.
